Ingredients
1 pkg raw mushrooms
1 pkg raw spinach
2 cup raw bean sprouts
1 cup carrots, shredded
1 zucchini, sliced
2 eggs
Directions
- Wash and rinse mushrooms thoroughly. Chop into pieces if necessary.
- Add 2 tbsp oil to large wok or fry pan. Stir-fry carrots for 2 min, followed by bean sprouts and zucchini for 1 min. Add mushrooms and spinach. Continue cooking until vegetables are tender.
- Fry eggs in a separate pan.
- Arrange vegetables as shown in picture. Place fried eggs on top of vegetables. Season with pepper if desired.
