Fry Bread

aka Elephant Ears
Servings: 6-7, Total Time: 2-3 hours

Ingredients
4 cup All Purpose Flour
4 tbsp baking powder
1 tbsp salt
2 cup lukewarm water
1/2 cup shortening (optional)
1 cup shortening (for frying)

Directions

  1. Mix flour, baking powder, and salt in a large bowl.
  2. Slowly add water (and optional shortening).
  3. Blend with a fork until a soft dough forms. Dough should not be sticky.
  4. Knead until all the lumps are gone, about 5 minutes.
  5. Cover bowl with plastic wrap. Let rest 1 hour.
  6. Roll dough into fist-size balls.
  7. Flatten and stretch dough into disks. Make a small hole in the center.
  8. Heat shortening over medium heat. Watch carefully.
  9. Fry in oil until brown on both sides, about 2 minutes.
  10. Serve hot. Spread butter on top and sprinkle with cinnamon sugar if desired.
